How do I get ReIm [u+Iv] to return {u,v} rather than {Re[u+Iv],Im[u+Iv]}? i.e., how can one declare u real?

Could use ReIm on numbers. For symbolic expressions there is ComplexExpand[{Re[expr],Im[expr]}].

ReIm[u + I v] // ComplexExpand
