Using a Dataset
titanic = ExampleData[{"Dataset", "Titanic"}]
ClearAll@doubleAge;
doubleAge[age_?NumericQ] := age * 2;
titanic[All, <|#, "age" -> doubleAge[#age]|> &]
You can replace doubleAge with any function and replace age with any column name.
