how can I do interpolation of 2 variables and 1 constant(3 D)?

In one experiment I calculate values x and y as my chosen constants and calculate z using them. Then I have to interpolate the values considering x again as constant and y chosen again by me(but distinct) and calculate z. I can use initially calculated experimental values for finding polynomial function f(x,y)= z where x is constant so the function should vary with change in y. How can I do it?
