Is there any easy way to edit styles for all my notebooks? For example, what if I wanted to change the color of the "Title" style from default red to blue everywhere. Could I?

Easy Way to Edit Global Styles?
First, read the tutorial on how to work with Stylesheets: https://reference.wolfram.com/language/tutorial/WorkingWithStylesheets.html You want to edit the "Default" stylesheet. This is fairly easy to do.
Still, I don't think you should do this. If you want your notebooks to look a certain way, then you would create your own stylesheet and then apply it to the notebooks you want to use. I wouldn't touch the Default stylesheet..
