The InterpolationOrder option just does that
InterpolationOrder
try the following
Manipulate[ ListContourPlot[ Table[Sin[i + j^2], {i, 0, 3, 0.25}, {j, 0, 3, 0.25}], InterpolationOrder -> ord], {ord, 0, 5, 1}]

Go to the help page for ListContourPlot
Click on the Details and Options
Scroll down to see that it accepts an InterpolationOrder option to let you specify the order
