Why do I get three values for the Mean, but one value for the MeanIntensity?

I want to learn more about the "Mean", "MeanIntensity", "Entropy" and "StandardDeviation" of an image, so could you please introduce to me a good reference or link?
"Mean" shows the value per channel while "MeanIntensity" provides the mean pixel intensity.
