You can change the magnification each time you open the documentation center by clicking on the magnification popup menu at the lower right hand side of the window.
Or you can change the default magnification of your entire Mathematica session by going to the Option Inspector, change the scope to Global Preferences and search for Magnification. Then for the Magnification listing under Display Options, choose a larger magnification.
