I tried starting a new notebook and even rebooting but that didn't help It seems that there is a Hold function on the Times but I can't figure it out could someone please help me?

Spaces are important in Mathematica : ax is not the same as a*x.
ax is taken as ONE symbol all in its own. Hence you need to either add one or more spaces, or use "*"
Using a space gives the output you were expecting
TreeForm[a x^2 + b x + c]
