The attached notebook describe my problem:
Generate a table of data
Use ListPlot3D to show the resulting surface.
Encapsulate the data into a Dataset and use ListPlot within the Dataset construct to plot portions of the data in 2D.
Try to plot using ListPlot3D to replicate the surface obtained above; seeming does not work.
What am I doing wrong?

See this post - it would seem that some functions have been updated to work with Association objects but others haven’t.
For example, bikeDS[ListPointPlot3D, {"A", "B", "C"}] works out of the box, but bikeDS[ListPlot3D, {"A", "B", "C"}] doesn’t.
The workaround is to use bikeDS[ListPlot3D, {#A, #B, #C} &] This notation works for all the functions, i.e. bikeDS[ListPlot, {#A, #C} &] etc.
