I wonder if one can create a GUI on RPi with the Wolfram language. For industrial tasks, we can not use commands line. Could you help ?

Yes, indeed, David is right. We use the Raspberries for teaching and they do come with the graphical frontend.

I gather that the Mathematica FrontEnd runs on the RPI, and hence the notebook interface. I don't have a RPI to experiment, but Stephen Wolfram indicates that it is usable here in the announcement:
